New Local Cheeses

We are now carrying the following four new local dairy products, highlighting the best of beta-carotene-rich, nutrient dense summertime milk, from cows and goats alike:

From award winning Caputo Brothers in Central Pennsylvania, a family-owned and operated cheesemaking company that is dedicated to using pasture-based milk from small PA dairy farms, to create authentic Italian cheeses:
  •  Ricotta Salata, or “Vecchio,” an aged and dried whey-based ricotta, aged at least six weeks, “…salty with a dash of sweet, custardy in aroma, and topped by a uniquely funky blue rind that adds an a array of complex earthy notes.” This cheese won 1st place at the American Cheese Society competition as a “Traditional Regional Italian Cheese.” Try it with your pasta, shaved on salads, shredded over tomato, or as a snack with honey. Here is a recipe for a ricotta salata watermelon mint salad. 
  • Provola… “a cheese with a smooth, firm consistency and a creamy, slightly tangy flavor.” Ideal for summer pizza nights and charcuterie boards!
