- 1 package soba noodles
- Handful of Soaked Hiziki seaweed
- One Thinly sliced red pepper
- Handful of choped fresh cilantro
- 1/2 bunch chopped scallions (about 4)
- 2 tbs toasted seseme oil
- 1 can coconut milk
- 1-2 tbs curry powder
- 2-3 cloves crushed, chopped garlic
- 2 tbs fresh grated ginger
- dash of cayenne pepper
- 2tbs mirin
- 1 lime juiced
- fresh pepper and sea salt ground
Cook soba noodles according to directions. Meanwhile, in a seperate medium - sized sauce pan, heat oil and mirin. Add everything else except the cilantro, lime juice and sea weed. Simmer a few minutes until vegetables are soft. Turn off heat. Add lime juice and cilantro and seaweed. Mix sauce mixture with cooked soba noodles. Season as necessary and serve.
