SOBA HIZIKI SALAD
  • 1 package soba noodles
  • Handful of Soaked Hiziki seaweed
  • One Thinly sliced red pepper
  • Handful of choped fresh cilantro
  • 1/2 bunch chopped scallions (about 4)
  • 2 tbs toasted seseme oil
  • 1 can coconut milk
  • 1-2 tbs curry powder
  • 2-3 cloves crushed, chopped garlic
  • 2 tbs fresh grated ginger
  • dash of cayenne pepper
  • 2tbs mirin
  • 1 lime juiced
  • fresh pepper and sea salt ground

Cook soba noodles according to directions. Meanwhile, in a seperate medium - sized sauce pan, heat oil and mirin. Add everything else except the cilantro, lime juice and sea weed. Simmer a few minutes until vegetables are soft. Turn off heat. Add lime juice and cilantro and seaweed. Mix sauce mixture with cooked soba noodles. Season as necessary and serve.
