Ingredients
- 3 cups cooked brown rice
- 1 1/2 cups cooked beans
- 1 sm onion, diced
- 1 lg. stalk celery, chopped
- 2 scallions, chopped
- 1/2 cup grated carrot
Marinade
- 2 1/2 tbsps. lemon juice
- 4 tbsps. extra virgin olive oil
- 1 lg. clove garlic, minced
- sea salt to taste
Toss together rice, beans and remaining ingredients with marinade. Let air a couple hours or overnight before serving.
