Here are two new ways to enjoy oatmeal, either as a meal or as a hearty snack. During the cold of winter, a steaming hot bowl of oatmeal is always a welcome sight at the table.
To begin, boil 2 and a half cups of salted water. Add one cup of rolled oats, and simmer for 15 minutes. Try adding a handful or two of dried tart cherries and dark chocolate chips. Enjoy this alongside of a freshly cut up apple and a hot cup of tea.
For savory oats, follow the basic recipe above, and add two handfuls of kale, freshly chopped, on top of the simmering oats for the last 5 minutes of cooking. Mix a spoonful of miso, tahini and nutritional yeast into each individual serving bowl. Add a pinch of thyme, rosemary and black pepper. Stir in the herbs well, adding a splash of water or tamari if more moisture is needed. Fill up the bowls with the steaming oats and kale, mix well and enjoy!
