FOR THE LOVE OF CHOCOLATE

Once reserved for royalty and special occasions, dark chocolate still invokes a feeling of elation and wellbeing. Savoring a piece of rich, dark chocolate calms the nervous system and acts as a natural antidepressant. Dark chocolate is high in flavonoids, iron, calcium and phosphorus. These antioxidants protect the body from aging caused by free radicals. Chocolate is good for the mind, body and soul so feel free to indulge in this beneficial treat on Valentine's Day.

CHOCOLATE FONDUE

  • Various dark chocolate bars (4 oz. of each variety)
  • 2/3 c. heavy cream
  • An assortment of freshly cut fruit: pineapple, bananas, strawberries, cherries, pears, etc.
  • Heatproof bowls

Put 4 oz. Pieces of chocolate bars into small, heatproof bowls set over small saucepans of steaming (not boiling) water. Do not let base of bowls touch water. Melt chocolate gently. In a separate saucepan, bring heavy cream to a boil. Add 3 tbsp. Cream to each bowl of melted chocolate. Set the bowls over a warming tray or candle warmers on the table with freshly cut fruit. Dip fruit in chocolate and enjoy.
