- Black Turtle Beans, soaked overnight.
- Simmer a big Rumbleway Farm Ham hock or two in about 5 quarts of water for about 2 hours until the meat is
falling off the bone.
- Take out ham hock and add 2 chopped onions, 1 entire garlic bulb, 1 diced Red Pepper, 1 diced Green Pepper, 3 chopped Carrots, 3 chopped Celery stalks, 1 dried Ancho Pepper cut into strips, some chicken stock, lots of cumin, cayenne, crushed red pepper, turmeric, coriander, sea salt, pepper, herbs de provence, olive oil and whatever else you want to throw in there, etc.
- Bring to a boil then add the black beans and soaking water.
- Let simmer for 2-3 hours.
- Puree 2/3 of the soup then add to remaining soup.
- Add the ham shredded from the ham hocks and 1 large can diced tomatoes. Simmer another hour or so.
Additional ingredients for variation: 1 70%+ dark chocolate bar, 1 bottle of Kaliber Dark Non-Alcoholic Beer {made by Guinness}, whatever fresh cooking herbs you might have in your garden, i.e. thyme, oregano, parsley, etc.)
Garnish with a little cilantro.
Serve with a fresh baguette!
